Step-by-Step Instructions
- In a mixing bowl, combine warm water, granulated sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
- In a large mixing bowl, whisk together all-purpose flour and salt. Once yeast mixture is foamy, pour it into the flour mixture and stir until dough forms.
- Transfer dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place kneaded dough into a greased bowl, cover with a towel, and let rise in a warm area for about 1 hour.
- Once risen, punch down the dough and divide it into 8 equal pieces. Roll each into a 24-inch rope and twist into pretzel shape.
- In a large pot, bring water to a gentle boil. Carefully add baking soda to dissolve.
- Boil each pretzel for 30 seconds on each side, then remove and place on baking sheet.
- Preheat the oven to 425°F. Whisk together egg yolk and water for egg wash, then brush on each pretzel and sprinkle with coarse sea salt.
- Bake pretzels for 12-15 minutes or until golden brown.
- Remove from oven and let cool on a wire rack for 5-10 minutes before serving.

Notes
Fresh yeast is essential for proper rise, and don’t rush the cooling process to avoid sogginess.
