Step-by-Step Instructions
  1. Beat the cream cheese until smooth and creamy, mix in sugar and vanilla, drop dollops onto a baking sheet and freeze for 30 mins.
  2. Finely grate fresh carrots and sift together the dry ingredients in a separate bowl.
  3. Combine melted butter, brown sugar, and white sugar with an electric mixer until fluffy, then mix in egg yolks and vanilla followed by carrots.
  4. Gradually add the dry ingredients to the wet mixture and fold gently until just combined.
  5. Chill the cookie dough for 10 minutes at room temperature while the cream cheese filling sets.
  6. Portion the dough into balls, insert frozen cream cheese dollops, cover with dough, and freeze for another 15 minutes.
  7. Preheat the oven to 350°F and bake cookies for 13-15 minutes until golden around the edges but still soft in the center.
  8. Cool the cookies on the baking sheet for 10-15 minutes and then transfer to a wire rack.
