Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare a large mixing bowl for the meatball mixture.
  2. In a mixing bowl, combine the ground beef, chopped onion, fresh cilantro, jalapeño, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper thoroughly.
  3. Gently fold in the shredded cheddar cheese and crushed tortilla chips until combined.
  4. Add the beaten egg to the mixture and mix until evenly combined.
  5. Shape the mixture into golf-ball-sized meatballs, ensuring consistent size for even cooking.
  6. Heat olive oil in an ovenproof skillet over medium heat and sear the meatballs for about 5 minutes.
  7. Pour the canned Mexican-style tomatoes with green chilis over the browned meatballs.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until cooked through.
