Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet.
  2. In a bowl, combine spinach, feta, cream cheese, garlic, olive oil, lemon zest, salt, pepper, and red pepper flakes. Mix well.
  3. Lay the butterflied salmon skin-side down on a surface and spread the filling evenly.
  4. Roll the salmon tightly from one end to the other and place seam-side down.
  5. Slice the rolled salmon into 1-inch thick pinwheels and place cut-side up on the baking sheet.
  6. Bake for 18 to 22 minutes until the salmon is opaque and flakes easily.
  7. Allow the pinwheels to cool slightly before serving warm with a salad or vegetables.
