Step-by-Step Instructions for Strawberry Spinach Salad
  1. Step 1: Prepare Cranberries - Start by softening the dried cranberries. In a small bowl, pour boiling water over them or microwave for 30 seconds. Let them sit for about 10 minutes before draining any excess liquid.
  2. Step 2: Make Spicy Pistachios - In a sauté pan, melt 2 tablespoons of butter until bubbly. Add in 1 cup of pistachios and sauté for 2-3 minutes. In a bowl, combine 2 tablespoons of honey, chili powder, and salt. Pour over pistachios in the pan and stir until well coated.
  3. Step 3: Assemble Salad - In a large salad bowl, combine 4 cups of baby spinach, three-quarters of your sliced strawberries and cucumber flowers, and red onion slices. Drizzle 2-3 tablespoons of dressing over the top and toss gently.
  4. Step 4: Top Salad - Add remaining strawberries and cucumber flowers on top, fold in plumped cranberries, and sprinkle the Sweet and Spicy Glazed Pistachios. Serve with extra dressing on the side.
