  • 2 cups sweet corn kernels Fresh, frozen, or canned

  • 1 teaspoon chili powder Adjust to taste

For Seasoning

For the Garnish
  • 1/4 cup chopped cilantro Can substitute with parsley

Method
 

Preparation Steps
  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a skillet, melt butter over medium heat and add sweet corn. Cook for 8-10 minutes until charred and golden brown.
  3. Remove from heat, stir in chili powder and smoked paprika, and let cool.
  4. In a large mixing bowl, combine the cooled pasta, charred corn, mayonnaise, lime juice, cotija cheese, cilantro, and jalapeño. Toss to combine.
  5. Season to taste with salt and black pepper. Cover and refrigerate for at least 30 minutes to meld the flavors.
  6. Before serving, give the salad a stir. Enjoy your Street Corn Pasta Salad cold.
