Preparation Steps
- Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a skillet, melt butter over medium heat and add sweet corn. Cook for 8-10 minutes until charred and golden brown.
- Remove from heat, stir in chili powder and smoked paprika, and let cool.
- In a large mixing bowl, combine the cooled pasta, charred corn, mayonnaise, lime juice, cotija cheese, cilantro, and jalapeño. Toss to combine.
- Season to taste with salt and black pepper. Cover and refrigerate for at least 30 minutes to meld the flavors.
