- Preheat your oven to 400°F (200°C). Slice the butternut squash in half lengthwise and scoop out the seeds.
- Drizzle cut sides with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet and bake for 40-50 minutes.
- In a skillet, cook diced bacon over medium heat until crispy, about 5-7 minutes. Remove and set aside, keeping drippings in the pan.
- Add minced garlic to the skillet and sauté for 30 seconds, then add spinach and sauté for 3-4 minutes until wilted.
- Remove from heat, stir in bacon and feta cheese, and mix gently until combined.
- Flip butternut squash cut-side up, stuff with spinach mixture, and return to oven for 15-20 minutes.
- Let cool slightly, garnish with herbs if desired, and serve.
