  • 2 tablespoons Granulated Garlic
  • 2 tablespoons Onion Powder
  • 1 tablespoon Ground Rosemary
  • 1 tablespoon Dried Thyme
  • 2 tablespoons Smoked Paprika
  • 1 tablespoon Dry Mustard
For the Roast
  • 3 pounds Chuck Roast well-marbled cut
  • 3 tablespoons Olive Oil
  • 1 tablespoon Kosher Salt
  • 1 teaspoon Black Pepper

Method
 

Preparation
  1. Prepare the chuck roast by bringing it to room temperature for about 30 minutes. Pat it dry and coat with olive oil.
  2. In a bowl, mix brown sugar, granulated garlic, onion powder, ground rosemary, dried thyme, smoked paprika, kosher salt, black pepper, and dry mustard for the rub.
  3. Apply the spice rub generously over all sides of the chuck roast and let it rest for 15-20 minutes.
  4. Preheat the grill to 400°F and prepare it with wood chunks for smoky flavor.
  5. Cook the roast on the grill away from direct flames for approximately 45 minutes, rotating halfway through.
  6. Check the internal temperature and wrap in foil to reach a tender texture if necessary.
  7. Let the roast rest for at least 15 minutes before slicing thinly against the grain.
