  • 1/2 cup Heavy cream Coconut cream can be used for dairy-free alternative.
  • 2 large Eggs (for cheesecake) Can be substituted with flax eggs for vegan adaptations.
For the Ganache and Decoration
  • 1 cup White chocolate chips Opt for dairy-free chips for vegan variations.
  • 1/2 cup Additional cookie dough balls Keep some from your preparation for decoration.

Method
 

Step 1: Preheat Oven
  1. Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it and lining with parchment paper.
Step 2: Make Sugar Cookie Crust
  1. In a large bowl, whisk together flour, baking soda, and salt. Cream butter and cane sugar until light, then mix in vanilla and egg. Incorporate dry ingredients and sprinkles, then press into the pan and bake for 10-12 minutes.
Step 3: Prepare Edible Cookie Dough Balls
  1. Cream butter and sugar for the cookie dough, then stir in vanilla and milk. Add dry ingredients and remaining sprinkles, form into balls, and chill.
Step 4: Mix Cheesecake Filling
  1. Beat cream cheese until smooth, then add sugar, sour cream, heavy cream, and vanilla. Incorporate eggs one at a time and fold in some cookie dough balls.
Step 5: Bake the Cheesecake
  1. Pour filling over crust and wrap pan in foil to create a water bath. Bake for 60-70 minutes, then cool inside the oven before chilling overnight.
Step 6: Prepare Ganache and Decorate
  1. Heat cream, pour over chocolate chips, and stir until smooth. Pour over chilled cheesecake and top with remaining cookie dough balls and sprinkles.
