- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with foil or parchment paper.
- In a medium bowl, whisk together melted unsalted butter, light brown sugar, and vanilla extract until smooth.
- Gradually add all-purpose flour, old-fashioned oats, salt, and baking soda to the wet mixture, stirring until just incorporated.
- Set aside ¾ cup of dough mixture and chill. Keep the rest at room temperature.
- Press the remaining dough into the bottom of the prepared pan and bake for 10 minutes.
- Spread your favorite jam or preserves over the baked crust.
- Crumble the chilled reserved dough over the jam layer.
- Return the pan to the oven and bake for an additional 15 to 18 minutes.
- Once baked, transfer the bars to a wire rack to cool completely.
