Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with foil or parchment paper.
  2. In a medium bowl, whisk together melted unsalted butter, light brown sugar, and vanilla extract until smooth.
  3. Gradually add all-purpose flour, old-fashioned oats, salt, and baking soda to the wet mixture, stirring until just incorporated.
  4. Set aside ¾ cup of dough mixture and chill. Keep the rest at room temperature.
  5. Press the remaining dough into the bottom of the prepared pan and bake for 10 minutes.

  7. Crumble the chilled reserved dough over the jam layer.
  8. Return the pan to the oven and bake for an additional 15 to 18 minutes.
