Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Prepare your roasting pan and line it with aluminum foil.
  2. In a medium saucepan, combine the honey, brown sugar, and Dijon mustard. Heat over low to medium until smooth.
  3. Score the surface of the ham in a diamond pattern, about 1/4 inch deep.
  4. If using whole cloves, insert them into the corners of the diamonds. Pour half of the glaze over the ham.
  5. Nestle pineapple rings around the ham, securing with toothpicks if desired.
  6. Bake for approximately 1.5 to 2 hours, basting every 30 minutes with the remaining glaze.
  7. Increase oven temperature to 400°F (204°C) during the last 30 minutes for caramelization if desired.
  8. Remove the ham from the oven, cover loosely with foil, and let it rest for 15 to 20 minutes before slicing.
  9. Slice the ham and arrange on a platter, garnishing with additional pineapple and cherries if using.
