- Preheat your oven to 325°F (163°C). Prepare your roasting pan and line it with aluminum foil.
- In a medium saucepan, combine the honey, brown sugar, and Dijon mustard. Heat over low to medium until smooth.
- Score the surface of the ham in a diamond pattern, about 1/4 inch deep.
- If using whole cloves, insert them into the corners of the diamonds. Pour half of the glaze over the ham.
- Nestle pineapple rings around the ham, securing with toothpicks if desired.
- Bake for approximately 1.5 to 2 hours, basting every 30 minutes with the remaining glaze.
- Increase oven temperature to 400°F (204°C) during the last 30 minutes for caramelization if desired.
- Remove the ham from the oven, cover loosely with foil, and let it rest for 15 to 20 minutes before slicing.
- Slice the ham and arrange on a platter, garnishing with additional pineapple and cherries if using.
