Marinating and Cooking
- In a bowl, whisk together sweet chili sauce, soy sauce, minced garlic, grated ginger, and lime juice. Add the chicken, coat it well, cover and marinate for at least 30 minutes.
- Heat a grill pan over medium-high heat. Remove chicken from marinade and cook for 5-6 minutes on each side until caramelized and cooked through. Let rest before slicing.
- In a saucepan, combine coconut milk, honey, and lime juice over medium heat. Simmer for 5-7 minutes until slightly thickened.
- Prepare jasmine rice according to package instructions and keep warm.
- Scoop rice into bowls, top with chicken slices, drizzle with coconut lime sauce, and garnish with cilantro, lime wedges, and chili flakes.
