Method
 

Marinating and Cooking
  1. In a bowl, whisk together sweet chili sauce, soy sauce, minced garlic, grated ginger, and lime juice. Add the chicken, coat it well, cover and marinate for at least 30 minutes.
  2. Heat a grill pan over medium-high heat. Remove chicken from marinade and cook for 5-6 minutes on each side until caramelized and cooked through. Let rest before slicing.
  3. In a saucepan, combine coconut milk, honey, and lime juice over medium heat. Simmer for 5-7 minutes until slightly thickened.
  4. Prepare jasmine rice according to package instructions and keep warm.
  5. Scoop rice into bowls, top with chicken slices, drizzle with coconut lime sauce, and garnish with cilantro, lime wedges, and chili flakes.
