- In a large mixing bowl, combine the rolled oats, peanut butter, and honey or maple syrup. Mix thoroughly until well blended to form a sticky dough.
- Gently fold in the chocolate chips ensuring they are evenly distributed throughout the dough.
- Prepare a lined baking sheet with parchment paper. Scoop out portions of the cookie dough, leaving space in between each cookie.
- Refrigerate the baking sheet with the cookie dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the cookies for 10-12 minutes until the edges are golden brown.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
