Step-by-Step Instructions
  1. Rinse 1 cup of uncooked white rice under cold water until clear. Combine with 2 cups of water or chicken broth in a pot. Bring to boil, cover, and simmer for 15-20 minutes until fluffy.
  2. In a skillet, cook 1 pound of ground beef or turkey over medium heat for 5-7 minutes until browned. Stir in taco seasoning and cook for 1 extra minute.
  3. In a small saucepan, heat one can of drained black beans over medium-low heat, stirring in additional spices if desired for about 10 minutes.
  4. Remove rice from heat, let sit covered for 5 minutes, then fluff with a fork.
  5. Layer a generous portion of rice in bowls, add seasoned ground beef, and warmed black beans.
  6. Top with shredded lettuce, diced tomatoes, and shredded cheese. Add any additional toppings you prefer.
  7. Finish with fresh lime juice and serve with salsa on the side.
