  • 1/2 cup Peanut Butter Provides creaminess and flavor; substitute with sunflower seed butter or tahini for a peanut-free option.
  • 2 tablespoons Low-Sodium Soy Sauce Adds umami flavor without excessive salt.
  • 1 tablespoon Brown Sugar or Honey Balances the sauce's taste with sweetness.
  • 1 tablespoon Rice Wine Vinegar Adds acidity to brighten the flavors.
  • 1 clove Minced Garlic Provides aromatic depth to the sauce.
  • 1 teaspoon Minced Ginger Adds warmth and spice for a flavor boost.
  • 1 tablespoon Sriracha Sauce Introduces heat; adjust according to your spice preference or omit for a milder option.
Filling
  • 2 cups Cooked Chicken Acts as the main protein; rotisserie chicken is a great time-saving option.

  • 1 whole Grated Carrot Adds sweetness and a pop of color.
  • 1/4 cup Chopped Cilantro Provides a fresh, herbal note that brightens the dish.
  • 1/4 cup Roasted, Salted Peanuts Enhances crunch and adds additional flavor.
Wrap
  • 4 large Tortillas Encases the filling; use traditional or large lettuce leaves for a low-carb version.

  • Whisk
  • microwave
  • airtight container

Method

Preparation
  1. In a small bowl, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, and minced ginger. If you prefer a thinner consistency, slowly add a tablespoon of water until the sauce reaches your desired creaminess. Set aside.
  2. In a large mixing bowl, combine cooked chicken, coleslaw mix, grated carrot, chopped cilantro, and roasted, salted peanuts. Drizzle a few tablespoons of the peanut sauce over the mixture, and gently toss everything together until well coated.
  3. Microwave tortillas wrapped in a damp paper towel on high for about 30 seconds to make them pliable.
  4. Lay a warm tortilla flat, spoon a portion of the filling down the center, fold the sides over, and roll tightly from the bottom up.
  5. Slice the wraps in half at a diagonal and serve immediately, drizzled with remaining peanut sauce and topped with extra chopped peanuts or cilantro, if desired.
