Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Line a muffin tin with cupcake liners and press the mixture into the bottoms. Bake for 5 minutes until golden, then let cool.
  2. Beat cream cheese, sugar, egg, and vanilla extract until smooth. Spoon the filling over the crusts, filling each about three-quarters full.
  3. In a skillet, melt butter, then add diced apples, sugar, and cinnamon. Sauté for 3-4 minutes until tender. Cool slightly and spoon on top of the filling.
  4. Mix oats, flour, brown sugar, softened butter, and salt in a bowl until crumbly. Sprinkle over the sautéed apples.
  5. Bake for 18-20 minutes until the filling is set and the topping is golden. Allow to cool completely.
  6. Chill in the refrigerator for at least 2 hours before serving to enhance flavors and set the cheesecakes.
