- Preheat your oven to broil mode. Husk the corn and place on a baking sheet. Broil for 10-15 minutes, turning occasionally until kernels are charred.
- In a medium mixing bowl, whisk together olive oil, mayonnaise, Tajin seasoning, salt, and lime juice until smooth and creamy.
- Once corn is roasted, cool slightly and shuck kernels into a large bowl. Add red onion and cilantro, then pour the dressing over and toss gently until well-coated.
- Serve immediately or chill in the refrigerator for about 30 minutes to allow flavors to meld.
