  • 1/2 cup Almond Milk or Oat Milk any non-dairy milk works
  • 1/3 cup Fresh Lemon Juice juice from about 2 lemons
  • 1 tablespoon Lemon Zest finely grated
  • 1/4 cup Maple Syrup or Agave Syrup or any liquid sweetener
  • 1/4 cup Cornstarch or Arrowroot Powder for thickening
  • 1 teaspoon Vanilla Extract pure extract
  • 1 pinch Turmeric optional for color enhancement
For Serving
  • 1 cup Fresh Mixed Berries a mix of raspberries, blueberries, and strawberries
  • 1/4 cup Mint Leaves for garnish
  • Extra Lemon Zest optional for garnish

Method
 

Step-by-Step Instructions
  1. Begin by chilling a can of full-fat coconut milk overnight. Scoop out the thickened cream into a medium saucepan.
  2. Add almond milk, lemon zest, maple syrup, and vanilla extract to the saucepan. Heat over medium heat, whisking until it simmers for about 4-5 minutes.
  3. Whisk cornstarch with fresh lemon juice in a bowl until smooth. Slowly pour into the simmering base while whisking. Cook until thickened for another 4-5 minutes.
  4. Strain the mixture through a fine sieve into a bowl for a smoother texture if desired.
  5. Pour the thickened mixture into jars. Let cool at room temperature for 10-15 minutes before refrigerating.
  6. Refrigerate for at least 2 hours until set.
  7. Top with fresh berries and mint leaves before serving.
