- Blend the fruits and veggies by placing strawberries, blueberries, spinach, and grated carrots into a blender. Blend until smooth.
- Transfer the mixture to a saucepan, add applesauce, honey or maple syrup, lemon juice, and vanilla. Heat on low for 3-5 minutes.
- Remove from heat and sprinkle gelatin powder over the mixture. Let sit for 1 minute.
- Return to heat and stir vigorously for 2-3 minutes until the gelatin is dissolved.
- Pour the mixture into molds or a lined baking pan and spread evenly.
- Chill in the refrigerator for at least 2 hours until firm.
- Carefully remove from molds or cut into squares if using a pan.
- Store in an airtight container in the refrigerator for up to a week.
