  • 2 cups Strawberries fresh or thawed frozen
  • 1 cup Blueberries

  • 1 cup Spinach
  • 1 medium Carrot finely grated
For Texture and Binding
  • 1 cup Unsweetened Applesauce
  • 2 tablespoons Gelatin Powder
For Sweetness & Flavor
  • 2 tablespoons Honey or Maple Syrup adjust to taste
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract

Method
 

Step-by-Step Instructions
  1. Blend the fruits and veggies by placing strawberries, blueberries, spinach, and grated carrots into a blender. Blend until smooth.
  2. Transfer the mixture to a saucepan, add applesauce, honey or maple syrup, lemon juice, and vanilla. Heat on low for 3-5 minutes.
  3. Remove from heat and sprinkle gelatin powder over the mixture. Let sit for 1 minute.
  4. Return to heat and stir vigorously for 2-3 minutes until the gelatin is dissolved.
  5. Pour the mixture into molds or a lined baking pan and spread evenly.
  6. Chill in the refrigerator for at least 2 hours until firm.
  7. Carefully remove from molds or cut into squares if using a pan.
  8. Store in an airtight container in the refrigerator for up to a week.
