Preparation
  1. In a medium mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onion. Stir in soy sauce, rice vinegar, Chinese chili oil, and sesame oil until all ingredients are well incorporated.
  2. Take English cucumbers, trim the ends, and spiralize using chopsticks to create fun shapes.
  3. Place the spiral-cut cucumbers in a bowl and sprinkle generously with salt. Massage the salt into the cucumbers and let them sit for 8-10 minutes.
  4. Rinse the salted cucumber spirals under cold water, then pat dry with a kitchen towel.
  5. Pour the dressing over the dried cucumber spirals and toss until coated. Chill in the refrigerator for a few minutes before serving.
