Step-by-Step Instructions
  1. Peel and cube the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
  2. Layer diced sweet potatoes in the slow cooker, followed by black beans, diced tomatoes, and vegetable broth.
  3. Add the chopped onion, bell pepper, and minced garlic on top of the other ingredients.
  4. Sprinkle with chili powder and cumin, add salt and pepper, and stir everything together.
  5. Cook on low for 6-8 hours or high for 3-4 hours until sweet potatoes are tender.
