  • 1 medium Carrot shredded or julienned
  • 1/2 cup Fresh Herbs (e.g., cilantro, mint) based on personal preference
  • 2 stalks Scallions or shallots if desired
  • 1-2 pieces Chili fresh or dried, adjust to taste
For the Dressing
  • 1/4 cup Lime Juice use fresh limes for best flavor
  • 2 tablespoons Fish Sauce or soy sauce/coconut aminos for vegan
  • 1 tablespoon Maple Syrup or brown sugar
  • 1 clove Garlic minced
  • Vinegar optional, rice vinegar recommended
For the Topping
  • 1/4 cup Toasted Peanuts or crispy shallots for texture

Method
 

Preparation
  1. Begin by peeling the green papaya and slicing it in half to remove the seeds. Shred the papaya into thin strips and place it in cold water with ice cubes.
  2. In a small mixing bowl, whisk together fresh lime juice, fish sauce, maple syrup, minced garlic, and optional vinegar. Adjust seasoning to taste.
  3. Drain and pat dry shredded papaya. In a mixing bowl, combine papaya, carrots, herbs, scallions, and chili. Toss gently.
  4. Pour the dressing over the salad and toss thoroughly to coat.
  5. Transfer the salad to a serving platter and sprinkle with toasted peanuts just before serving.
