Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine almond flour, protein powder, monkfruit sweetener, and melted coconut oil. Blend these ingredients until crumbly.
  2. Grease a 13 x 9 inch baking pan. Pour the crumb mixture into the pan and press evenly. Bake for about 10-12 minutes or until golden brown. Allow to cool slightly.
  3. Blend cream cheese and Greek yogurt until smooth. Add monkfruit sweetener, lemon zest, lemon juice, vanilla extract, and protein powder. Mix until silky and uniform.
  4. Pour the filling over the cooled crust, spreading evenly with a spatula.
  5. Bake for about 15-18 minutes. The edges should be firm while the center jiggles slightly. Cool to room temperature.
  6. Refrigerate for at least 2 hours to firm up. Cut into nine squares and top with additional lemon zest.
