  • 1 cup All-Purpose Flour or gluten-free 1:1 baking flour
  • 1/3 cup Granulated Sugar
  • 1/3 cup Light Brown Sugar
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 1/2 cup Unsalted Butter melted and cooled
For the Filling
  • 1 can Sweetened Condensed Milk
  • 3 large Egg Yolks at room temperature
  • 1/2 cup Heavy Cream or coconut cream for dairy-free
  • 1/2 cup Fresh Lemon Juice freshly squeezed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, granulated sugar, brown sugar, salt, and baking powder. Add melted butter and mix until crumbly. Press two-thirds into the pan.
  3. Bake for 15 minutes until golden. Meanwhile, whisk together sweetened condensed milk, egg yolks, heavy cream, a pinch of salt, and lemon juice in a separate bowl.
  4. Pour the filling over the baked crust, smoothing it with a spatula. Sprinkle the remaining crumb mixture on top.
  5. Bake again for 15-20 minutes until golden brown and filling is set but jiggles slightly.
  6. Cool at room temperature for 20-30 minutes, then refrigerate for at least 4 hours before cutting.
