Preparation
- Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
- In a mixing bowl, combine flour, granulated sugar, brown sugar, salt, and baking powder. Add melted butter and mix until crumbly. Press two-thirds into the pan.
- Bake for 15 minutes until golden. Meanwhile, whisk together sweetened condensed milk, egg yolks, heavy cream, a pinch of salt, and lemon juice in a separate bowl.
- Pour the filling over the baked crust, smoothing it with a spatula. Sprinkle the remaining crumb mixture on top.
- Bake again for 15-20 minutes until golden brown and filling is set but jiggles slightly.
- Cool at room temperature for 20-30 minutes, then refrigerate for at least 4 hours before cutting.
