Step-by-Step Instructions for Strawberry Crepes
  1. Prepare the Skillet: Grease a medium-sized frying pan with cooking spray and place it over medium heat. Preheat for about 2-3 minutes until hot.
  2. Blend Batter: In a blender, combine the eggs, melted butter, milk, flour, sugar, vanilla extract, and salt. Blend until smooth, about 30 seconds.
  3. Cook Crepes: Pour approximately ¼ cup of the batter into the hot skillet, tilting to spread evenly. Cook for about 30 seconds, until edges start to bubble. Flip and cook the other side for an additional 30 seconds.
  4. Whip Cream: In a stand mixer, pour in the heavy whipping cream and beat on medium-high speed until soft peaks form, about 4-5 minutes.
  5. Assemble Crepes: Spread half of a cooked crepe with whipped cream and 1 tablespoon of strawberry spread. Fold into thirds and repeat for remaining crepes. Serve warm, dusted with powdered sugar.
